A Lil' Bit o' Brit: The Victoria Sponge Cake

Loyal viewers of a certain popular UK show centered around baking will surely be familiar with many a British staple by now -- from mince pies to scones and everything in between. Among these classics is none other than the Victoria Sponge Cake, also known as a Victoria Sandwich Cake, long considered an emblematic part of British tea culture. The cake itself was named after Queen Victoria, who enjoyed eating small versions of the cake with her afternoon tea. Victoria Sponges are typically made with a jam filling layered between two round sponge cakes, the top layer of which is usually left bare, apart from a dusting of powdered sugar.
